So, I’ve always wanted a KitchenAid mixer, but I’m not that much of a baker so I couldn’t justify the price. I’d always look at them when I went to home stores and it was the first thing I would have bought if I ever won the lotto (well, second, first would be a house, but it would have been my first “frivolous” purchase).
Then, on Tuesday we went to Canadian Tire and there it was, in Ice Blue, 40% off.
So I bought it.
On Wednesday night we decide to make a cake, ostensibly to celebrate the new NHL season, but mostly just to try the new mixer out.
Since we didn’t plan ahead, we picked up a box of carrot cake mix. To make the mix taste a bit more like a cake, and less like a mix we:
- Used an extra egg
- Used double the amount of melted butter instead of vegetable oil
- Used milk instead of water
- Added 2 teaspoons of vanilla extract
- Preheated the oven to 350F as the instructions called for, but reduced the heat to 325F when we put the cake in, and then baked it for the longer time listed
It looked great coming out of the oven!
And then after Lance put the icing it was too good to resist!
